Definition of Appellation

At the first level, the Bourgogne AOC defines simple wines produced throughout the Burgundy region (Yonne, Côte d’Or, Saône-et-Loire). It can be specified by the name of a grape variety (Bourgogne aligoté) or by the name of a sub-region which limits production (Bourgogne Côte chalonnaise…).
